Barrel Aged Hermannator – Vancouver Island Brewing


From Vancouver Island Brewing in Victoria comes their “Barrel Aged Hermannator”.  The beer pours a deep brown colour with a red tinged head.  The aroma consists of dark fruits, red wine, oak, anise, toffee, caramel, bready malts and sweetness.   The flavour is of red wine, dark fruits, cherry, caramel, chocolate, toffee, earth, citrus rind and bitterness.  The alcohol content comes in at 8.5% with an IBU of 25.  This was a very interesting beer but it had little left of what Hermannator was sadly.  I hope in future versions of Barrel Aged Hermannator they let the original beer shine thought a little more.

Commercial Description:  Our original Brewmaster Hermann Hoerterer designed Hermannator as a seasonal gift to friends & family in 1987. It soon became our flagship brew, the most anticipated beer of the year. 2017 marks the 30th anniversary of Hermannator. To celebrate we’ve aged Hermannator in red wine barrels, leaving it with beautiful notes of red wine, sherry, and plum that will only get better with time.  Hermannator Ice Bock is a well loved and established beer. By aging it in red wine barrels the plum and sherry notes are added upon to create a wholly different experience. Fruitier, brighter, and dangerously easy to drink. The additional 2 months of barrel aging leaves an aggressive red wine note that is sure to age beautifully for those that can resist drinking it all right away.

I do not usually run out to buy 6 packs of beer.  I usually want to be trying as many different beer as possible but this is one beer that breaks the mold.  “Hermannator Ice Bock” from Victoria’s Vancouver Island Brewery is just that good!  This ice bock is cold aged in a cellar for over 3 months to help build the flavour.  The beer pours a deep chestnut brown colour with a small brown head.  The aroma consists of brown sugar up front with toasty malts, dark fruits, chocolate and an overall sweetness.  The flavour is of brown sugar, molasses, dark fruits like raisins, milk chocolate, roasted malts, nuts, mild bitterness and a pretty prominent alcohol warming at the end.  Much like many winter ales this is a great one to age for a year or three to lessen the alcohol warmth while building the malts.  This beer is a huge 9.5% alcohol but you would not guess it when you drink it!  This is one dangerously easy drinking beer and must be taken seriously!

Commercial Description:  Brewed in limited batches each year, Hermannator Ice Bock was first introduced by Hermann, one of our original Brewmasters, during the holiday as a unique gift to his closest friends and customers. Crafted at 9.5% abv, using a signature blend of chocolate and caramel malts, this German Eisbock is slowly cold aged in our cellar for over 3 months.

Having a six pack if you don’t want to age a few bottles maybe you want to cook with it!

Hermannator Cookies (Hermannator Ice Bock – Vancouver Island Brewery)


Hermannator Cookies

I would like to thank Vancouver Island Brewery for the recipe for these awesome cookies!  I have altered the recipe slightly to taste removing white chocolate and replacing it with dark chocolate.

The ingredients you will require

2 Bottles Hermannator Ice Bock (or equivalent imperial ice bock)
1 cup brown sugar (two portions of 1/2 cup)
2 & 3/4 cups of flour
1/3 cup unsweetened cocoa powder
1 tsp espresso powder
1/2 tsp salt
3/4 tsp backing soda
1/2 cup butter softened to room temperature
1/2 cup shortening (I used vegetable shortening)
1 cup white sugar
2 eggs
1 tsp vanilla extract
1.5 cups milk chocolate chips
1.5 cups dark chocolate chips

Preheat oven to 350F

Put beer and 1/2 cup brown sugar into a medium saucepan over medium heat.  Reduce mixture until syrupy and measures 1/3 cup.  In a medium saucepan this takes around 30-45 min (in a small one it is hours oops).  Watch it carefully because you do not want to scorch it.  Remove syrup from heat.  Set aside to cool slightly.

Whisk together flour, cocoa powder, espresso powder, baking soda and salt in a bowl and set aside.

Cream or beat with mixer butter, shortening, white sugar, 1/2 cup brown sugar, in a large bowl until fluffy.

Add beer syrup, eggs and vanilla into creamed mixture and mix to combine.

Stir flour-cocoa mixture into creamed mixture until flour is incorporated.  Do not beat or over mix as you could end up with tough cookies

Add chocolate chips to mixture.  Fold the chocolate into mixture to achieve a consistent mix.

Drop portions of the batter by the teaspoon onto cookie sheets (spray with pam to ensure non stick).  The batter may appear dry but don’t worry they will bake into beautiful tasty cookies._MNG2468  _MNG2469

Bake for about 12 minutes.  Let stand and cool before eating the entire batch in one sitting!

Obviously my portions were too big.  These are amazing moist chocolate chip cookies that taste amazing.  Run out and pick up a 6 pack so you can make cookies and Chili!

Hermannator’s Famous Chili (The Terminator) – (Hermannator Ice Bock – Vancouver Island Brewery)


Hermannator’s Famous Chili (The Terminator)

This recipe is taken right from Vancouver Island Brewery’s website in Victoria BC.  Thank you Van Island Brewery for this great recipe to try out!

I do not know that many Ice Bock’s out there so I would say this has to be made with Hermannator Ice Bock locally.

This recipe serves 6-8 people.

Ingredients list:

2 teaspoons oil
2 onions, chopped
3 cloves garlic, minced
1lb lean ground beef
3/4lb beef sirloin, cubed
1 (14 1/2 ounce) can diced tomatoes
1 bottle Hermannator Ice Bock (341ml) or equivalent beer
1 Cup Strong Coffee (I substituted for decaf as my girlfriend can not have caffeine)
2 (6 ounce) cans tomato paste
1 Can beef broth
1/2 cup brown sugar
3 1/2 tablespoons chili sauce
1 tablespoon cumin
1 tablespoon cocoa
1 teaspoon oregano
1 teaspoon cayenne
1 teaspoon coriander
1 teaspoon salt
4 (15 ounce) cans kidney beans (I used 2 cans white and 2 cans red kidney beans)
4 chili peppers, chopped
(I added mushrooms as a personal preference)

Getting down to business!

Prepare vegetables including onions, garlic and mushrooms.

Cut the beer sirloin into cubes

Heat oil.  Fry onions, garlic, mushrooms and meat until meat is browned and vegetables are partially caramelized.  (Cooks faster covered but you will have to drain liquids before transferring)

Transfer browned meat and caramelized vegetables to a large pot.

Now it is time for the bulk of the work.  Pour yourself a glass of Hermannator to help the cooking go better.

Once that is done add a the diced tomatoes, Hermannator Ice Bock, cup of strong coffee, tomato paste and the beef broth to the pot.

Next add brown sugar, chili sauce, cumin, cocoa, oregano, cayenne, coriander, salt, 2 cans of kidney beans and chili peppers.

Reduce heat and simmer uncovered for 1 1/2 hours.

Next add 2 remaining cans of kidney beans and simmer for another 30 minutes.

Once done it is ready to serve.  I recommend serving it with a piece of bread and butter.

Like my first cooking with beer endeavor this dish went over very well!  This is probably my favorite chili I have personally had and my friend seemed to agree.  My girlfriend and my friends husband on the other hand found it a bit to spicy but tasty.  This dish is named well as it will Terminate the weak.  For the strong ones out there though like Sarah Conner this is a dish you should try!  Go out and Buy some Hermannator before it is gone for the Spring and Summer!

Limited Fall Release

From Victoria’s Vancouver Island Brewery comes “Hermannator Ice Bock” a lager not to be messed with!  This beer is aged for 3 months in cold tanks.  This beer pours a deep chestnut-brown colour with a brown head.  The aroma consists of chocolate, roasted malts, caramel and nuts.  The beer has the flavour of chocolate, roasted and candied malts, plums, raisins and nuts.  This beer has a very warm alcohol finish but does not have a strong alcohol taste.  The alcohol content of this amazing brew is 9.5% and as such care should be taken when drinking this beer as it tastes so good.

Food Pairing as per Vancouver Island Brewing:  Hermannator Ice Bock pairs well with pork, sausages, red meats and desserts – think tiramisu. The sweet malts and slight roasted chocolate flavours balance rich foods and enhance sweets.
