Hermannator Cookies (Hermannator Ice Bock – Vancouver Island Brewery)


Hermannator Cookies

I would like to thank Vancouver Island Brewery for the recipe for these awesome cookies!  I have altered the recipe slightly to taste removing white chocolate and replacing it with dark chocolate.

The ingredients you will require

2 Bottles Hermannator Ice Bock (or equivalent imperial ice bock)
1 cup brown sugar (two portions of 1/2 cup)
2 & 3/4 cups of flour
1/3 cup unsweetened cocoa powder
1 tsp espresso powder
1/2 tsp salt
3/4 tsp backing soda
1/2 cup butter softened to room temperature
1/2 cup shortening (I used vegetable shortening)
1 cup white sugar
2 eggs
1 tsp vanilla extract
1.5 cups milk chocolate chips
1.5 cups dark chocolate chips

Preheat oven to 350F

Put beer and 1/2 cup brown sugar into a medium saucepan over medium heat.  Reduce mixture until syrupy and measures 1/3 cup.  In a medium saucepan this takes around 30-45 min (in a small one it is hours oops).  Watch it carefully because you do not want to scorch it.  Remove syrup from heat.  Set aside to cool slightly.

Whisk together flour, cocoa powder, espresso powder, baking soda and salt in a bowl and set aside.

Cream or beat with mixer butter, shortening, white sugar, 1/2 cup brown sugar, in a large bowl until fluffy.

Add beer syrup, eggs and vanilla into creamed mixture and mix to combine.

Stir flour-cocoa mixture into creamed mixture until flour is incorporated.  Do not beat or over mix as you could end up with tough cookies

Add chocolate chips to mixture.  Fold the chocolate into mixture to achieve a consistent mix.

Drop portions of the batter by the teaspoon onto cookie sheets (spray with pam to ensure non stick).  The batter may appear dry but don’t worry they will bake into beautiful tasty cookies._MNG2468  _MNG2469

Bake for about 12 minutes.  Let stand and cool before eating the entire batch in one sitting!

Obviously my portions were too big.  These are amazing moist chocolate chip cookies that taste amazing.  Run out and pick up a 6 pack so you can make cookies and Chili!

Gael’s Blood Potato Ale – Crannog Ales


From Sorrento in the Shuswap area, just north of the Okanagan Valley’s Crannog Ales comes the “Gael’s Blood Potato Ale”.  They grow many of the ingredients for their beer and the spent grains are fed to the animals on the farm. All of their ales are only available on tap in BC pubs and restaurants. Every ale they produce is a Certified Organic Irish style Ale.  This beer pours a clear but deep amber/copper colour with a tan head.  The aroma of this brew is of potatoes, earth, slightly smokey, very malty, caramel and floral hops.  The flavour of the beer is of potatoes up front with earth, bread, caramel and a really strong maltieness and a mild hops bitterness.  This beer has a very nice balance between hops and malts even though the malts are far more obvious.  This is one complex brew  and I can not wait to have my next pint!  The beer has an alcohol content of 5.2% and an IBU of 48.

Commercial Description:  This rich Irish red ale is made with organic potatoes for an exceptionally smooth, rich body. It is extraordinarily rich in malt flavour, with just the right amount of hop finish. It’s an immigrant ale, uniting the staple food of Ireland with plenty of new world hops. (Formerly known as “Hell’s Kitchen”.)

Wailua Wheat Ale – Kona Brewing Company


Spring / Summer Seasonal

From Kona Brewing out of Kailua Kona, Hawaii (The Big Island) comes their “Wailua Wheat Ale” one of their Aloha Series brews.  This beer pours a lager yellow which has been filtered with an off white head.  This beer has an aroma of passion fruit as well as some other fruits, some malts and wheat.  The beer has the flavour of passion fruit, wheat and is sweet but not overly with a very mild almost none existent hops bite.  This wheat beer has an alcohol content of 5.4% and an IBU of 15.  I would recommend this beer to anyone that likes flavoured wheat ales.

Commercial Description: Swimming in a fresh water pool at the base of a cascading waterfall is what we all imagine we would find in paradise. On Maui, follow the old Hana Highway and you will find such a place – Wailua Falls. This plunging cascade of clear water is the inspiration for our Limited Release Wailua Wheat Ale. This golden, sun colored ale has a bright, citrus flavor that comes from the tropical passion fruit we brew into each batch. Sit back, relax and enjoy paradise anytime.

Suggested Food Pairings by Kona Brewing: Wailua Wheat Ale is an excellent beer to enjoy after a day on the water or at the beach (or even after mowing the lawn or playing softball in your “pau hana” summer league!). It typically pairs well with lighter fare like grilled fish and shrimp, roasted chicken, salads and Asian foods. Perhaps even a dish of vanilla ice cream.

Big Swell IPA – Maui Brewing Company


From Maui Brewing Company out of Lahaina, Hawaii (Maui) comes the “Big Swell IPA”.  The can states “Bif, hoppy, bold, smooth, and hoppy… Did we mention hoppy?”.  I was sold so I picked up a 6 pack of cans.  The beer pours a golden amber colour with a slightly off white head.  The aroma of the beer is both fruit and floral hops. This is a true Hawaiian IPA with the standard tropical fruits of most of the beer on the Islands with a nice hopy bitterness to finish it off.  The alcohol content of this beer is 6.8% with an IBU of 50+.  I would recommend this beer to anyone who loves a good IPA.

Commercial description: Our handcrafted India Pale Ale brewed with four different kinds of Northwestern Hops and malted barley …dry-hopped to perfection.  Its flavor begins smooth and malty and is followed with a big burst of hop flavor.

Hops used in the brew: Columbus, Chinook, Centennial, Simcoe, Falconer;s Flight and Citra.

Fearless India Pale Ale – Dead Frog Brewing


Dead Frog Brewing  out of Aldergrove BC is a special brewery to me.  Back when I was still drinking garbage beer I heard about this new local brewery named Dead Frog.  The name was just bazaar enough to get me to pick up a case and try it out.  I was hooked!  I did not know what a good lager was until I tried their beer.

When I heard that they had started to brew a real IPA I did not know what to expect as their main business is craft Lager.  I searched high and low for this new “Fearless India Pale Ale” to no avail it was sold out everywhere.  What a predicament!  I happened to be driving by the brewery for work so I stopped in to pick a bottle up.  I noticed right away it looked nothing like their other beer bottles (interesting).

Once I got home and the bottle was chilled I cracked it open.  The beer poured a very nice coppery colour with a large tan head.  There was lots to be found on the nose including citrus, tropical fruits, grapefruit, pine, and floral hops.  This is a hop forward IPA in flavor for sure with citrus, tropical fruits, pine and some mild grapefruit.  This is one mighty fine IPA containing all the right characteristics of a Real IPA including enough hops that it  just might hop away (get it).  The alcohol content of the beer is 6.5% and the IBU is 77.

This beer is the first collaboration by two of the new members of the dead frog family Tony Dewald and Timmy Brown.  These two brother in-laws know their brewing!  With this addition to the ligneup I cannot wait to see what these two think up next!

So do yourself a favour and find this Dead Frog asap!  Like they say “Nothing goes down like a cold dead frog”!  For drinking this beer you even get a badge!
